Pork Chops with Capers
Serves 6
Ingredients:
6 bone-in pork loin chops, 1 inch thick, 6 to 8 ounces each
1 teaspoon Kosher salt
2 tablespoons butter
2 tablespoons extra virgin olive oil
4 plump garlic cloves, crushed and peeled
1/2 cup all-purpose flour for dredging, plus more as needed
1 large lemon, sliced in thin rounds
6 whole Tuscan-style pickled peperoncini drained
3 tablespoons small capers, drained
3/4 cup white wine
1 tablespoon freshly squeezed lemon juice
2 tablespoons chopped fresh Italian parsley
